After years of prospecting the area, Pilar Vila-San-Juan and Eduard Susanna set their eyes on the Matarranya region. They enjoyed season after season in the region, becoming captured by its untouched landscape, enjoying its true Mediterranean flavors and rich traditions visible in the produce and gastronomy as well as in the architecture and local arts and artisanal crafts.
In 2005 they made the decision to buy the farm and time has proven this a wise decision. They embarked on this olive growing adventure with passion and commitment, truly challenged by the idea of making a premium extra virgin olive oil.
Pilar’s great experience in interior design for country houses and world class hotels brings the attention to detail and rigor in upholding high quality standards. On the other side, her passion for cooking and permanent research for unique local ingredients is bringing a wealth of gastronomical ideas.
Eduard’s experience is on executive management. Over 15 years as CEO of a fine chemical distribution company allowed him to build the taste for entrepreneurial projects. Back in the mid eighties he already was involved in the food industry sector working at Mercantile Food Co. (CT, USA) and the related Farm Verified Organic programme. His know-how on industrial operations translates into the guarantee of high quality and rigorous processes that bring top products to the market. His commitment for sustainability and his passion for olive oil turned his attention to this unexplored terroir.
Altogether, helped by a family tradition of fine food and revered hospitality, has put them on the track of creating a high end range of products. Olives and olive oils, preserves and fine foods are developed in this region under high quality standards.
